These easy cookie recipes involve mixing popular ingredients, chocolate and peanut butter, and then allowing them to chill in the refrigerator. No bake cookies are great options for summer picnics and barbecues when bakers want to provide homemade cookies without starting the oven.

Kids will have an easy time helping with these bar cookie recipes since parents don’t have to worry about timing trays of cookies baking in the oven and young children being close to hot baking trays. Don’t limit these recipes to the summer; these chilled cookies are tasty treats throughout the year. Even if family members aren't allergic to peanut butter be considerate of other's health when bringing these bar cookies into other's homes.

Easy Peanut Butter and Chocolate Chip Cookies

Graham crackers and chunky peanut butter make thick a dough that gets dotted with chocolate chips.

Ingredients

  • 2 cups of graham cracker crumbs (20 double graham crackers)
  • 1 ½ cups confectioner’s sugar
  • 1 ½ cups milk chocolate chips
  • 1 cup chunky peanut butter (try cashew or almond butter for variety)
  • ½ cup room temperature butter or margarine

  1. Set the graham crackers into a plastic bag and crush them with a rolling pin. Continue until the crackers are finely crushed.
  2. Mix the graham crackers, confectioner’s sugar, peanut butter, and butter. Mix well with a fork. This dough will be stiff.
  3. Press into an 8” x 8” baking pan. Sprinkle chocolate chips over the dough. Press the chips into the dough.
  4. Chill for an hour.
  5. Cut into 16 bars. Refrigerate leftover cookies.
Peanut Butter Cookie Recipe

Cereal, raisins, and nuts add crunch and chew to this peanut butter bar.

Ingredients

  • 1 cup flake cereal
  • 1 cup unsweetened puff cereal
  • ½ cup raisins
  • ¼ cup unsalted cocktail peanuts
  • ¼ cup creamy peanut butter
  • ¼ cup light or dark brown sugar
  • ¼ cup honey
  • 2 teaspoons unsalted butter

  1. Line an 8” x 8” baking pan with nonstick foil.
  2. Combine the cereal, raisins and peanuts.
  3. Over medium-high heat, stir together the peanut butter, brown sugar, honey, and butter in a saucepan. Stir constantly as the mixture comes to a boil. Remove the pan from the stove and stir for one more minute.
  4. Stir the peanut butter mixture into the cereal and coat evenly. Press the mixture into the foil-lined pan with a silicon spatula.
  5. Chill for at least an hour or until firm.
  6. Remove from the foil and cut into twenty-four bars.
